The awesome versatility of the rotisserie chicken


A couple months ago, when I was in a bit of a cooking rut and had a hard time thinking of what to cook for dinner, I bought a rotisserie chicken. Everything changed after that.

Suddenly, I was able to think of a few delish dinners that I could make with the chicken. Chicken quesadillas! Pasta with chicken! Chicken salad sandwiches!

After I returned home from the store, I pulled most of the chicken off and stored it in containers in the refrigerator for easy access. That night, I made the quesadillas (the above pic is of my quesadilla ingredients...), and made the pasta and sandwiches in the days following. I also threw a little on salad for lunch a couple days...

And I made all of those meals out of one $5 rotisserie chicken - So wonderful!
