What we ate... Easy Mexican(ish) night


I always take advantage of the nights that Ryan's at the studio by eating vegetarian. It's not that I don't like meat... I just know that I (along with everyone else) could use a few more Meatless Mondays - or Tempeh Tuesdays? Tofu Thursdays? - in my life.

Last night was also one of those nights when I was determined to "use what I have" to come up with something not only tasty, but healthy.

Here's what I knew I had on hand:

Tortilla chips (left over from the bday party)
A can of black beans
Greek yogurt
Grape tomatoes
White cheddar from TJ's (their cheese is super cheap and super delish)
Salsa from TJ's

The obvious choice was nachos, but of course I adapted Jett's dinner to a more kid-friendly black bean mash (combining all of the above ingredients except for the chips and salsa).

He seemed to like it just fine... But liked it even more when I scooped little bites onto his tray. He's starting to have a real preference for self-feeding these days. When I'm spoon-feeding him something that he doesn't seem to love (like last night), chances are that if I scoop a little onto his tray, he'll gobble it right up.

So, that's what we did. And it was messy.


The mess wasn't confined to the face/tray/chair, however... Every now and then, Jett would grab a small handful of beans and drop it on the floor. He'd do it so nonchalantly, almost like he was trying to say, "Nothing to see here, Momma..."

Overall, though, I'd say it was a success. We definitely need more beans in our lives (don't we all?)... They're such a perfect food. And I know that I need to offer beans to Jett often, so that he'll grow to like them more.
