I like an occasional frozen waffle, or even a belVita morning biscuit or two... But sometimes I want something a little more homemade. Which is why I was thrilled to come across scrambled egg muffins on eat. drink. smile. Perfect!
I love the idea that I can make these on Sunday (my preferred day to prep weekday meals) and then pop them in the fridge, ready for the weekday scramble (pun intended, LOL).
ingredients:
1 lb pork sausage
16 eggs
1/2 cup chopped onion
1/3 cup chopped green pepper
1 tsp garlic salt
1 tsp pepper
1 cup shredded cheddar cheese
directions:
In a skillet, brown the sausage; drain. In a bowl, beat the eggs. Add onion, green pepper, garlic salt, and pepper. Stir in cheese and sausage. Spoon by 1/3 cupfuls into greased muffin cups. Bake at 350 degrees for 20-25 minutes or until a knife inserted in the middle comes out clean.

Oh, and a quick note about my muffins... I took her advice and just used the cheese I had in my fridge (mozzarella) and only used about 1/2 lb. sausage.
