Hulk Shake 2.0!


Do you ever feel that you should add more kale (or other greens, for that matter) to your diet, but don't really want to deal with the hassle of recipes? Me too!

I'm such a big fan of smoothies for this reason... You can just throw everything in a blender and - VOILA! - you have a nutrient-packed meal (or snack) that you can drink! How awesome and convenient is that?!

I bought a bunch of kale at Sprouts (aka my new fave place!) on Monday, and I had totally intended to make some of those kale chips that everyone raves about. But I never got around to it, so when I was thinking about what I could make for Jett's snack yesterday I had one of those "Aha!" moments... 

I knew this would be a genius idea for two reasons... First of all, Jett LOVES Hulk Shakes! Secondly, getting him to eat veggies is like pulling teeth lately. Ugh. And obviously, a smoothie is an awesome way to get a generous helping of veggies.

There were a couple hiccups (Next time, I'll blend longer - we had some blender noise-induced crying! - as our smoothies weren't as smooth as I usually like), but Jett LOVED it, and I thought it was pretty good.

Here's the recipe, which as always can be adapted to your preferences / what you have on hand...

Hulk Shake 2.0

Serves 2

Ingredients
- 3 cups loosely packed kale, washed, de-ribbed and torn into smallish pieces
- 1/2 cup milk
- 1 banana, cut into smallish pieces
- 4 strawberries
- 1/2 cup yogurt (Greek or regular, your choice... We used one of Jett's Chobani Champions, since that was all we had on hand!)
- 1 T honey
- Handful of ice

Directions
- Blend kale and milk until smooth
- Add remaining ingredients and blend until desired consistency is reached

Optional add-ins
- 1-2 T peanut butter (I'll probably add this in next time, since I find that it gives such a great flavor to the original Hulk Shake)
- Handful of blueberries (Or any other fruit you have on hand)
- 1/4 cup frozen chopped pineapple
- Cinnamon
