Spring has officially begun!

For the past three years, I have taken part in a Spring/Summer CSA through a local farm called Avalon Acres, and yesterday I picked up my first box of goodies of the season!

The first boxes usually contain lots of lettuces and strawberries (Like the beauties above… Yum!). We also received some bok choy, kohlrabi, green onions, spinach and radishes… And some farm fresh eggs too!

This year, I decided to order eggs and meats (We will get a variety, ranging from chicken, beef and pork…) in addition to the share of veggies that we split with my sister. Apparently this season has started well for the farmers as we don’t usually have a pre-season share like we did yesterday (The first official pickup is on May 6).

Besides helping local farms, being part of a CSA helps us eat a little healthier, and the veggies are quite delicious. It’s just a win-win for everyone involved, it seems.

We celebrated last night with a yummy salad that we made with our farm-fresh veggies! I’m so excited to get back into trying new recipes with my CSA veggies this year, since the thought of most veggies (especially salads) made me quite ill at this time last year. ;)
