While I love a good turkey sandwich, I’m always searching for quick/healthy/fresh ideas that are a little outside the norm. Thats why I love the lunch I made yesterday… It’s adapted from a recipe I found on dinneralovestory.com, and the ingredients can easily be changed/added/etc.


For yesterday’s lunch, I combined brown rice (TJ’s has awesome/easy frozen brown rice that you just pop in the microwave…), chopped avocado, chopped cucumber and chopped tomato. I threw in a little bit of TJ’s soy ginger vinaigrette, and voila - a delicious lunch!


If you didn’t have an avocado or a cucumber at home, you could substitute any veggie, really. The basic formula is just rice + veggie + yummy dressing. Good to know, huh?! So simple, yet maybe something that doesn’t just pop into your head as you’re aimlessly walking through the aisles, trying to think of something a little different for lunch. :)
