
If you, like me, have gotten tons of eggplant in you CSA lately but haven’t known what to do with it, I have just the recipe for you!
Last night, I made sausages with ratatouille from the Real Simple No Time To Cook app… Yum! Everything except for the pasta I served it with (I used Barilla Plus rotini, if you’re wondering) was fresh from my CSA box. We’ve been getting lots of eggplant, peppers and tomatoes lately, and this week’s meat portion was Italian sausages, so this recipe was perfect for last night. I didn’t have a can of diced tomatoes on hand, so I just diced a pint of cherry tomatoes I had, which undoubtedly improved the flavor anyway.
It was pretty easy, and it turned out to be way more delish than I thought its be. Ryan actually went back for seconds, and then ate another helping before bed, LOL.
