My friend Mende shared a recipe with me recently that is just perfect for a weeknight meal. Not only is it delicious, it's also a great recipe to prepare in advance, so that you can easily pop it into the oven at the end of a long day. I love to prepare at least one weekday meal on Sunday. That way, I don't have to even think about planning/cooking on Monday (and who doesn't want less Monday stress?!).
Here's the recipe...
- Combine shredded chicken (I used a couple breasts I had roasted), half of a bag of frozen broccoli, 1 can cream of mushroom soup, 1 can cream of chicken soup, 1 small container of light sour cream, and some lemon pepper seasoning in a large mixing bowl.
- Spread mixture in baking dish.
- Top with 2 sleeves crumbled Ritz crackers.
- Bake at 350 for 30 minutes, or until heated through. (If you're heating a refrigerated casserole, you probably want to add 5-10 minutes to the cooking time).
Voila - easy, delicious casserole that the whole family will love (Mine did, at least!)!
