Kale - So hot right now!


That kale is so hot right now!

When I say that in my head, it's like the line from Zoolander: "That Hansel is so hot right now"... LOL

Anyway, doesn't it seem like every other recipe you see these days is kale-this or kale-that? And why shouldn't kale be the "it" ingredient? One cup of the stuff contains 36 calories, 5 grams of fiber, and 15% of the daily requirement of calcium and vitamin B6 (pyridoxine), 40% of magnesium, 180% of vitamin A, 200% of vitamin C, and 1,020% of vitamin K. It is also a good source of minerals copper, potassium, iron, manganese, and phosphorus.

So basically, it's a detoxifying/weight-loss aiding/immune-system strengthening/hair-skin-and-nail nourishing/bone strengthening/eyesight improving/anti-inflammatory/disease fighting powerhouse!

Whoa!

I've been wanting to make a kale something or other, so when I saw this recipe for sausage, kale and white bean stew, I knew I'd have to make it. 

It's super good (everyone seemed to enjoy it - and it was even good as leftovers!)... So good good that I'd even like it if it didn't include so-hot-right-now kale.
