I LOVED summer as a kid and a teenager. We spent countless hours at the Lake of the Ozarks, Beaver Lake and Table Rock Lake, which definitely instilled a love of the season in me. Hot days spent out on the water, and breezy nights by the campfire... Ahhhh, memories.
Then you grow up and realize that the 9-to-5 year-round work schedule ruthlessly robs you of your summer vacay.
RUDE!
So yeah, for the past decade or so, summer hasn't been my favorite season, but I always love the Fourth of July. It's the pinnacle of summer festivities - One fun day (or weekend) of summery activities.
And then we can all start pining for fall (the best season).
But I digress. This post is actually about a recipe that I'm about to make.
My in-laws asked me to make pasta salad, and for us to bring Jack Daniels (a bottle of the stuff, not some guy) to the party. And I was all "No way! I just made a pasta salad last week, and I don't drink whisky!"
Actually, I'm fine with a whisky drink every now and then, but I didn't plan on consuming enough to justify bringing an entire bottle. LOL
So I told them I'd make a cheesecake and we'd bring a bottle of wine.
Sounds much better, doesn't it?
I had been salivating over a cheesecake recipe in the latest Everyday Food that came with my Martha Stewart Living. And I don't even like cheesecake that much! It just sounded so good.

Well, the flavor was there, but it wasn't quite as firm as I thought it'd be, and I even refrigerated it for more than 24 hours! WTF?
