In our weekly CSA box, we often receive things we don’t have any problem using quickly: lettuce, strawberries, tomatoes, squash, peaches, etc. In each box, however, there’s always a thing or two that we either have no clue as to what it is (Um, hello kohlrabi!) or we just have a harder time figuring out how to use it.


Last night’s meal included a vegetable of the WTF-should-I-do-with-this variety… Bok choy. I know that bok choy is often used in Asian dishes, but I hardly ever make Asian food, as it seems quite difficult to get the sauces “just right”.


This recipe for Teriyaki Chicken and Bok Choy, however, seemed to be pretty much fool proof, since it calls for store-bought teriyaki sauce. And since I only needed a few things for this recipe from the grocery store, I figured we’d try it. While I don’t generally like chicken thighs, they turned out quite excellent. They were seasoned perfectly and were quite juicy. And the rice and bok choy were perfect sides.


I’ve gotta hand it to Real Simple… They continue to impress me with their easy, healthy and delicious recipes!
