Baked BBQ Chicken & Blender Vinaigrette

It's POURING here as I type... And I kind of love it!

It's nice to have a break from the super sunny and hot days, and I actually like this kind of weather every now and then. So moody.

We have had a quite eventful past few weeks... My sister was in town for a week, we road-tripped it up to Kansas City to visit family, and we've continued to explore Tulsa! I have a lot of blog catch-up to do, but today I'd like to share a couple recipes/tips.

First of all, my sister and I made the most delicious baked BBQ chicken the other day. The recipe was pretty simple, too! Click here for the recipe.

Also, I wanted to share a salad dressing recipe. I loathe most store-bought dressings (there are definitely a few that I absolutely love, though, like this one - SO good!), and I tend to enjoy most homemade dressings, no matter how simple. I've been making variations of the following recipe for quite a while now, and recently, I used the blender, which definitely sped up the mixing process. Feel free to swap out/add spices/vinegars/etc, and experiment with the amounts - add some minced garlic for bonus points! You can't really mess this one up!

Blender Vinaigrette

1/2 cup extra virgin olive oil
1/4 cup red wine vinegar
1 tablespoon honey
1 tablespoon dijon mustard
Salt & pepper, to taste

Pulse ingredients in blender until combined.
